Lemon Pepper Roasted AsparagusNothing tastes more like summertime to me than grilling or roasting up some fresh veggies from the farmers market.  A couple weekends ago we braved the heat and headed out for the day to check out all the goodies.  We came home with several bags full of fruit and veggies and it was time to start meal (and snack) planning so that we didn’t waste a bit.  I couldn’t believe we had scored some fresh asparagus for $1 a bundle and since it goes so well with many things I knew we’d find a quick and simple way to use it!  Just love the Farmer’s Market!!

Crockpot Pork Tacos with Adobo Sour Cream

Can I just say I love it when people send me recipe ideas?!!  This one came to me from a fabulous lady who just happened my boss where I used to work (seems like a lifetime ago and so glad we still keep in touch!!).  It’s something her family has been making (and loving!) for [...]

Homemade Seasoning Blends

A lot of times a recipe will call for a packet of taco seasoning or a packet of ranch dressing mix and a lot of times that’s just exactly what I use.  But sometimes I want something a little different.  Perhaps I want it to be a bit spicier, have a bit more garlic or [...]

Crockpot Corn and Potato Chowder

My mind has been working in all sorts of weird ways these days.  Like every meal idea that pops into my head makes me wonder “can that be done in the crockpot?”.  More often then not the answer is yes.  Except for, well, I can’t even think of anything at the moment!  But then there [...]

Crockpot Cheesy Adobo Chicken

The weather this week?  Spectacular!!  58 degrees for our morning runs?!!  I’m soaking it all in!  As much as I love so many things about summer this is really making me start dreaming of fall.  And soon we will be dreaming of all the traditional fall foods in the slow cooker.  But it seems this [...]

Crockpot Black Bean Corn and Basil Tostadas

For many years I used to make a dip that would always seem to disappear at any gathering.  It was fresh and tasty with just a tiny hint of spice and plenty of flavor.  I actually can’t believe it’s been so long since I’ve made it but for some reason it popped into my mind [...]

Super Simple Sides: Crispy Garlic Onion Green Beans

How wonderful is the feeling of walking in the door after a long day at work (school, running errands, <insert other locations you may have been all day>) and to know that dinner has been simmering away all day for you in the slow cooker?  Awesome, right?!  Except, what if you need a side dish?  [...]

Crockpot Enchilada Pasta

I made some yummy enchilada bowls a while back that were pretty easy and everybody liked them, including me. But the only problem was that I felt the texture, while fine, wasn’t quite what I wanted. The rice turned out just a little on the soft side and when I was thinking of making them [...]

Crockpot Cheesy Buffalo Chicken Pasta

Ohhhh, I’m going to be such a bad influence right now.  I mean, if you are trying to eat super healthy or stick to light salads for dinner you might want to look away.  Except don’t!  Because we all need a little cheat now and then, right?  And this one is totally (and I mean [...]

Crockpot Chicken Tortilla Soup

I’ve posted over 100 recipes since I started this blog and I can’t believe I haven’t posted ANY recipes for Chicken Tortilla Soup!!  Maybe it’s because I never actually make it the same way more than once.  But that’s why I love it!  I can add a little of whatever I have and it makes [...]

Crockpot Chicken Stroganoff

So this was one of those dinners I never even planned.  I actually had something else in mind that I had been looking forward to making for a couple weeks.  But then I used the chicken from that for something else.  So I went and bought some more chicken and then when I opened the [...]

Crockpot Buffalo Chicken Tater Tot Casserole

Tater tot casserole is a staple in our house.  Since I can keep the ingredients on hand we often have it when I haven’t planned anything else or forgot to put something in the crockpot.  But I have to admit that I, the person who puts almost everything in the slow cooker, have only ever [...]
