Fall is easily a squash obsessed girl’s favorite time of year! I signed up (again-I had taken a bit of a break) for a local organic produce delivery service because I wanted an opportunity to try out all different kinds of squash I normally wouldn’t think of. That being said there’s not much that beats a good ‘ole butternut squash. The only issue? The amount of time it takes to peel, cube and cook! While a roasted butternut squash is delicious for sure, often I just don’t have the time to mess with it. Equally as delicious? This butternut squash made super simple in the slow cooker.
When the folks over at Simple Slow Cooking contacted me and asked if I’d be interested in trying out a recipe for their blog, I jumped at the opportunity! I always love trying out new recipes and they have so many awesome cookbooks I knew it would be no problem to find something delicious to [...]

Don’t go out to a fancy brew pub for your favorite beer cheese soup! For practically the same price you can make an entire crock of it at home. And best of all you can completely customize it. Whenever we are crazy enough to ask our little purple princess what she wants for dinner we must prepare ourselves for the inevitable answer of “Chicken and SpongeBob”. Okay, okay. I know she’s really saying french fries but it seriously sounds like SpongeBob so I think that’s just what we will be calling our fries [...]

Although in life I tend to be quite a rule follower, when it comes to cooking I kind of like to be a rebel. Enchilada’s are the perfect food for cooking rebels because you can pretty much make them any way you want! While there’s nothing wrong with the traditional, like beef or chicken, sometimes [...]
I was lucky growing up in that my family all ate dinner together almost every night. I didn’t realize it at the time, but it really was a big deal. It’s something that many families struggle with now days, mine included. I always remember my favorite meal being a big ole crockpot of pork chops [...]
What is it about the start of fall and the first few cool, crisp and rainy days that makes wrapping your hands around a nice hot bowl of steaming soup seem like the answer to every bad day you’ve ever had?! As an obsessive committed Crock-Pot user I can honestly say that I use my [...]
How about the Royals?!?! This is a very exciting time to be in KC!! I really know nothing about baseball and so I will spare you listening to me trying to discuss the game. But I had to at least give a mention!! I’ve been to plenty of games where they lost but boy are [...]
How about a quick, weeknight, vegetarian meal that even picky little kids will eat?! (Or at least my picky little kid did!) Are your kids particular about what they will eat? This “I don’t like it” stuff from an otherwise adorable 3 year old is making me crazy. My expectations were too high. My teenage [...]
Life is better with sauces and dressings! I live for them! I plan my meals around them! Gotta have a few good recipes to give your dinner or your salad that little extra kick to make it special. At our house some form of ranch dressing comes along with nearly every meal. Mostly for my [...]
